A good way to use leftover ham or smoked pork shoulder.

Ingredients

3 large slices sourdough bread
1 1/2 to 2 cups finely chopped cooked ham
1/2 bunch fresh broccoli, finely chopped (2 cups)
1 medium onion, minced
1 1/2 cups shredded sharp Cheddar cheese
3 eggs
1/2 tsp. dry mustard
2 or 3 dashes hot pepper sauce
1 1/2 cups milk

Directions

1. Trim crusts from bread. Arrange slices in greased, shallow 1 1/2-quart baking dish.

2. Mix ham, broccoli, onion and 1 cup of the cheese.

3. Beat eggs slightly with mustard. Beat in hot pepper sauce and milk. Add to ham mixture, mixing well.

4. Spread over bread crusts in baking dish. Sprinkle with remaining cheese.

5. Bake at 350F for 50 to 60 minutes or until well browned and firm. Let stand a few minutes before serving.

Comments

Good served with sauteed pineapple rings.
