Caribbean Seafood Salad |

Seafood and tropical fruits blend together for a beautiful, elegant salad for a special luncheon or supper.
Ingredients
1 lobster tail, 3/4 lb, thawed
8 large shrimp, uncooked
2 quarts boiling water
1 lemon, sliced
2 ripe papayas (about 5-inch size)
2 green onions, minced
2 Tbs. olive oil
1 Tbs. fresh lime juice
1/2 tsp. salt, optional
1/4 tsp. black pepper
1 avocado, peeled, pitted, sliced
1 head Romaine lettuce
Lime Mayonnaise ( in Salad Dressing Category)
Directions
Drop lobster tail and shrimp into boiling water with lemon. Cook just until shrimp are pink; remove shrimp. Cook lobster according to package label directions. Remove. Cool in cold water. Remove shells from fish.
Cut lobster into 3/4-inch dice. Blend lightly wiht seafood and green onions.
Fold in oil, lime juice, salt, if desired, and black pepper. Cover and chill 30 minutes to 6 hours or until serving time.
Just before serving, add avocado. Line salad bowl with crisp lettuce leaves, Pile salad into center. Serve with Lime Mayonnaise to spoon over individual servings.
